Ordering & Delivery

How do I order?

We operate on a pre-order drop model. Sign up for our email and SMS list, and we'll notify you 48 hours before each drop opens. Orders are available for a limited time or until we sell out.
Do you ship nationwide?

Not yet. Currently we deliver within a 25-mile radius of Manhattan or offer local pickup. Location TBC.
How long does delivery take?

Production takes 3-5 days after your pre-order is confirmed. We'll email you when we go into production and again when your order is ready for delivery or pickup.
What's the delivery fee?

Flat rate $8.95 within 25 miles of Manhattan, regardless of order size.
Do you offer pickup?

Yes. Free pickup available. We'll email you when your order is ready with pickup locations and windows.
What if I'm not home for delivery?

We'll text you when we're 20 minutes away. If you miss the delivery, contact us at orders@papachiangs.com and we'll arrange a redelivery during the next delivery window.

Dumplings

What's in the dumplings?

Ground pork, napa cabbage, scallions, ginger, soy sauce, sesame oil, rice wine, salt, sugar, white pepper, garlic powder, and our handmade dumpling wrappers (wheat flour, water, salt). Full ingredient list on packaging and the Pork and Napa Cabbage Dumplings page.
Do they contain allergens?

Yes. Contains wheat (wrapper) and soy (mushroom soy sauce in filling). The mushroom soy sauce contains wheat. Made in a facility that handles eggs.
Are they fresh or frozen?

Frozen. We make them fresh in small batches, then freeze immediately to preserve quality. Cook directly from frozen—do not thaw.
How long do they last in the freezer?

Up to 3 months when stored properly at 0°F (-18°C) or below. Keep frozen until ready to cook.
How do I cook them?

Pan-fry (10-12 min): Heat oil, add dumplings flat-side down. Cook until golden (3-4 min), add water, cover to steam (6-7 min), uncover to crisp.

Boil (7-8 min): Drop in boiling water, stir gently, cook until they float, then add a small bowl of water and bring to a boil again.

Garnish with your toppings and serve with your favorite dipping sauce.

How many dumplings per bag?

Approximately 27 dumplings per 2 lb bag. Perfect for 2-3 people as a meal, or 4-5 as an appetizer.
Do you offer other flavors?

We're starting with our classic pork and napa cabbage dumplings perfected by Papa Chiang over decades. More flavors may come later. Sign up for our email list to be first to know.
Are they spicy?

No, the dumplings are savory, not spicy. Pair with chili oil if you want heat.

Subscriptions

How do subscriptions work?

Subscriptions are coming soon. We're planning three options:

Can I pause, skip, or cancel a delivery?

Full details on subscription management will be available when we launch.
When will I be charged?

You'll be charged on your billing date (the day you subscribe, or every 2 weeks for Freezer Staple). Dumplings ship shortly after.
Can I change my subscription plan?

Yes, you'll be able to upgrade or downgrade anytime from your account once subscriptions launch.

Company & Story

Who makes Papa Chiang's dumplings?

Named after my father, who cooked for decades in New York after immigrating from Shanghai. This project began as a way to give him and others like him in the retirement or retired phase a reason to keep their hands moving and their spark alive.
Can I visit your kitchen?

We don't have a public-facing storefront or kitchen tours at this time. Perhaps one day.

Orders, Returns & Refunds

Can I change or cancel my order?

Contact us within 12 hours of placing your order at orders@papachiangs.com. Once we've started production, we can't make changes or process cancellations.
What's your refund policy?

If you're not satisfied with your dumplings for any reason, contact orders@papachiangs.com within 12 hours of delivery. We'll offer a replacement or full refund—your choice. No questions asked.
What if my order arrives damaged?

Email us within 12 hours at orders@papachiangs.com with photos. We'll make it right with a replacement or refund within 24 hours.
What if my dumplings arrive thawed?

If your dumplings have thawed during delivery (they should arrive frozen solid), contact orders@papachiangs.com within 12 hours with photos. We'll send a replacement order or issue a full refund.
Do you offer wholesale or partnerships?

Not at this time. We're focused on building our direct to consumer community first and keeping production small batch and handmade.
